Fiber is not destroyed by Vitamixing?

Hello Bruce,The answer is yes - the fiber has the same benefits after blending. I asked a friend of mine who is a local professor of molecular biology this very question and here is her answer:Hi Lea Ann,Blending does not destroy any of the benefits of fiber. If we actually chewed our food the way we were designed to chew it ( hence all the molars) it would pretty much look the same as if we had blended it in the Vitamix. However, since we don't chew our food well, the Vitamix helps us out. In any event, it is still fiber (soluble and insoluble), it still does the same work and nothing is lost. Soluble fiber forms a gel when mixed with water, so its soluble in water but we can't break it down into its component parts at the molecular level and neither can the Vitamix. That would take a chemical reaction not a physical separation like the Vitamix. Insoluble fiber does not mix with water and therefore acts as a vacuum to pull out junk in our colon and help clean the intestinal tract. However, it is not chemically changed by the Vitamix just "pre-chewed" so to speak. Next time someone asks you about this tell them to "ruin" the fiber at the molecular/atomic level would take a chemical reaction, not a mechanical one.
