Guest guest
One more thing...if you decide you want to can salsa, I do have an absolutely DEVINE recipe for that.... mary beth > > > > , good to know you can freeze in Ball jars. I just looked that up this morning, and it seemed to be a no-no. > > Thanks for the canning link, . Their warning about not changing the proportion of onions etc is what puts me off canning my marinara since I just kind of throw things together. > > By the way, when I said I hadn't seen any Vitamix-specific canning instructions, it wasn't for lack of looking. I guess canning is the same no matter how you prepare the tomatoes . . . >

Guest guest
Sorry this took me so long. I'm on the daily digest and don't always check the messages every day. Here's the link: http://allrecipes.com/recipe/salsa-ii/detail.aspx Its a basic recipe, but I roast all the veg (tomato and peppers) on the grill and boil for far less time than is suggested. Basically, I use the recipe as a ratio for safe salsa canning but combine them in my own way. I do alter the jalepeno/hot pepper amounts for heat, since sometimes I have scotch bonnets or other peppers I need to use up that have varying amounts of heat. Don't know if you use Allrecipes, but if not, I find that it is helpful to read the top few reviews before starting any recipe. Happy canning.
