I know you're not supposed to mix fruit with fat, but I've found a couple of online videos that add coconut oil right at the end? Not sure if it's a good idea or not. Melt the coconut oil completely and allow it to cool (but not harden.. mine will stay at room temperature for at least 30 minutes before it starts to go back to a solid). Mix your smoothie, and *while there is still a vortex* pour the coconut oil straight down the center. It will get completely mixed in before it has a chance to harden again.
