Hello,Well, yesterday was a red letter day for customers giving me recipes! I had a lady who is a caterer in the West Palm Beach area (who LOVES her Vitamix and has catered for Celine Dion) visit my booth and give me this recipe. She says that she makes it in the Vitamix, and pours the batter into muffin cups.After reviewing the recipe - I assume that it is the fruit that she "makes" in the Vitamix. She gave me her card with her number, so I might call to get some clarification on this… No, I remember she said that she makes the batter in the Vitamix and stirs the apple/raisins/nuts into it later. So IMO, this would have to be made in batches or cut in half???? Again, I'll check after this show - or some of you industrious bakers could make it and let us know how you did it?Anyhoo - here it is:Aloha Cake (made into muffins)In the Vitamix:3 cups of Flour5 cups of Fruit (I assume pureed) she said to use whatever fruit you like (the fruit is THE sweetener, so I doubt that berries would work without added sweeteners)1 cup of Oil1 tsp. Baking Soda1 tsp. Salt1 tsp. VanillaChopped and stirred into the batter:2 cups chopped Apple2 cups Raisins1 cup Nuts (she uses Macadamia - said you can use what you like)Topping (she didn't give proportions)CoconutBrown SugarNutsIt is so funny that she gave me this recipe, because I was just going to ask the group - "how many of you use your Vitamix to make batters, and what are your favorite batters to make in the Vitamix"?Oh, and a nice off-topic comment… Celine Dion gave her mom a Vitamix because this caterer showed Celine how the Vitamix works and told her all about it. I assume Celine doesn't need one, because I doubt that she has to make her own food ;-)
