Also, I leave commercial butter out on the counter and tried that with my raw butter. I make a small portion of butter every week, and it is usually enough to last me until the next batch. Raw butter is also AMAZING as a hair and skin conditioner. I use any left overs for that, slathering it on and letting it soak in for a few minutes before I shower. I haven't needed hair conditioner or skin lotion in years! Oh, and yes, you can freeze it, but it doesn't thaw to its original silky consistency, and gets a bit grainy, but is fine for use in sauces and such where it will be incorporated and won't really matter. I went to watch Lea Ann doing her demonstration this weekend and I asked her how to make nut butter. She told me to roast 3 1/2 cup nuts in cocanut oil in the oven for 10 to 15 minutes. I brought my nuts into the store and she showed me how to use the Vitamix to make the butter. I poured out the nut butter. Then she added 1 cup of my homemade almond milk to the vitamix with the remnants of the butter, added 3 cups ice and blended. It was a wonderful treat and it cleaned the nut butter out of the bottom of the vitamix. I'm thrilled to have a new dessert I can serve my family and have an easy way to clean out the vitamix too!
