Guest guest Posted March 30, 2004 Report Share Posted March 30, 2004 Since we were on the subject of pork...which by the way, I have questioned whether we should be eating but have continued to eat as well, I have a recipe that we have occasionally for breakfast (we had it this morning) that I call Ham and Peppers. I consider it a good way to get some vegies in the morning. I suppose you could also make it for dinner. It goes like this: Wash and slice some nice, big jalapeno peppers (I usually use about 6 for 4 people). I take out the veins so my kids won't complain that they are too hot. Saute them in a large skillet with some butter until they start to carmelize a little. Add the ham steak to the pan and cook it until done, turning once or twice. Serve with eggs lightly fried in the ham, pepper, butter juice. We also usually have fresh pineapple or mango or other tropical fruit sprinkled with coconut with this. My youngest also has a V-8. My kids fight over the " middle of the bone " -heathens, but I'm sure there are nutrients in there that they crave. So that's it!
