She told me to roast 3 1/2 cup nuts in cocanut oil in the oven for 10 to 15 minutes. I brought my nuts into the store and she showed me how to use the Vitamix to make the butter. I poured out the nut butter. Then she added 1 cup of my homemade almond milk to the vitamix with the remnants of the butter, added 3 cups ice and blended. It was a wonderful treat and it cleaned the nut butter out of the bottom of the vitamix. I'm thrilled to have a new dessert I can serve my family and have an easy way to clean out the vitamix too! It was so nice to meet you and I look forward to seeing you again in December!Isn't Almond/Pecan divine?If anyone is interested - I love to roast a 50/50 blend of Almonds and Pecans in a 350° oven for 15 minutes (I dump them in a gallon size plastic bag and coat with a touch of coconut oil first)I usually make more of this mix than 3.5 cups (the amount for the nut butter recipe) so I have left overs to snack on! :-)I also added a small hand full of dates to the almond milk and ice. When I make homemade butter, I follow by making a cheese sauce to incorporate the butter into the sauce. Planning ahead makes it so you don't waste any of those yummy residues! Remember though, that RAW butter is not "bad" for you like traditional "butter" is. Raw butter digests itself, so you don't store the fats. I make a small portion of butter every week, and it is usually enough to last me until the next batch. Raw butter is also AMAZING as a hair and skin conditioner. I use any left overs for that, slathering it on and letting it soak in for a few minutes before I shower. I haven't needed hair conditioner or skin lotion in years! Oh, and yes, you can freeze it, but it doesn't thaw to its original silky consistency, and gets a bit grainy, but is fine for use in sauces and such where it will be incorporated and won't really matter. I've just been diagnosed with gallbladder disease and have to have surgery to have the GB removed. Not supposed to have greasy oily foods and am wondering if this butter would be ok for me. You would have to have access to cows or a source for raw milk. Once pasteurized, milk loses the enzymes needed for self digestion. The process for making butter is exactly the same whether you use pasteurized or raw cream, but raw is so much better for you and your body doesn't store it as fat. I have my own cows, so I have access to plenty of cream needed, but you can make butter using store bought cream as well, it just doesn't have the same digestive properties. We have the Fiddyment Pistachio owners in the area (they had to sell their ranch as development moved in) and they bought land in other areas, but still have an office north of us and sell their products. Fiddyment was the first to find that the trees could be planted and thrive here in the Sacramento valley. Their products were/are wonderful. I bought roasted unsalted pistachios at Whole Foods. After shelling I put them into the Vitamix. They were very dry. Lea Ann suggested I might try adding Almond Oil in it. I tried that, but the butter got lumpy and slick and the oil stayed together - it did not mix with the pistachio butter. So, I poured out the oil. The resulting pistachio butter tastes good, but the texture is wierd, too thick and lumpy and hard to spread. Then I made mixed nut butter with the last cup of pistachios with a cup of almonds and a cup of cashews. This was much better, not as dry, but still dryer than the regular nut butter I make which is almonds, walnuts, pecans and sunflower seeds. I probably won't try pistachio butter anymore. I purposely left nut butter in the container, then I added Rice Milk, two Frozen Bananas, and a spoon full of Raw Cocoa Powder. Buzzed that up on High and Voila - my hubby got a delicious, chocolate/banana/peanut butter shake! If you ordered your Vitamix from me, I always see that a 3-pack of Vitamix spatulas are included with your order. These spatulas are very firm all of the way out to the edge, and they are also nice and narrow. I couldn't get along without these spatulas! Keep this concept of using what is left over in the container for something else and do it as often as possible.
