On this board it seems like everyone has their own gourmet oatmeal concoction. Mine is as follows: 1 c. steel cut oats 1 c. flaxmeal 4 c. water Microwave in a deep covered casserole dish 20 minutes on 1/2 power. Add 1T. cinnamon & 1 C. water, stir, microwave 15 minutes 2/3 power. Stir in 1/4 c. almond butter. This recipe makes alot. Store in the frig. I put 2/3 C. in a bowl with a little water and microwave 3 minutes then stir in a scoop of protein powder (sometimes chocolate) and have that for breakfast before work. Also eggs cook good in the microwave. One egg plus 1/2 C. egg beaters plus one slice of tofu halapeano cheese is yummy. Top with salsa. Meals, drag out that crock pot. There are alot of low carb crockpot recipes on the net. Today I sliced an onion and lots of garlic and put that on the bottom, added a little chicken broth, alot of spices, 5 chicken breasts, then 2 chunked sweet potatoes and a handful of brussel sprouts. That's supper after work. Finally, cottage cheese, how could we forget? Cut up a small apple, sprinkle with splenda and cinnamon, add 1T. water, microwave 3 minutes. Top with 1/2c. cottage cheese. It's a good meal six. Tuna with chopped apple and a bit of mustard. Protein pancakes. I make mine with 1/2 scoop vanilla protein powder, 1/4 cup egg beaters, 1/3 cup oatmeal and 1 T. cottage cheese (plus, cinnamon and Equal). Oatmeal cooked with water, cinnamon, Equal, served on top of cottage cheese with a bit of unsweeted apple sauce on top. Chicken stirfryed with mushrooms and onions served with barley. Microwaved yam served with cottage cheese (with Equal and cinnamon). * I really like Equal better than Splenda, and I've found that as long as I don't bake with it, I can add it to hot foods and still have it retain its sweetnes. Chicken pizza: 1/2 whole wheat pita tomatoe sauce seasoned with garlic and dried onion 1/2 oz fat free mozzerella 1 serving cooked diced chicken diced onion & mushroom Top it all on the pita and bake at 350...approx 10-15 min. I make up several of these and freeze them...very handy for a yummy quick meal. Chicken burritos: Saute diced chicken in a fry pan sprayed with PAM. When the chicken is done, add black beans and salsa to taste. I do about 50 % chicken and 50% beans. warm on low heat. Take a whole wheat tortilla and sprinkle on some fat free cheddar and microwave till melted. Add your chicken & beans and top with cottage cheese (a good sour cream sub!) YOu can also add lettuce, etc... Omlette I cook my favorite vegs in a pan sprayed with PAM> ie - onion, mushroom, etc....dice up about a tablespoon of very lean ham. Then pour in my egg whites and let them cook. Sprinkle with fat free cheese and fold it over. Add a carb and your set. Chicken wraps: If I have left over chicken from the night before, I dice it up and top it on a whole wheat tortilla. Add lettuce, tomatoe, sprouts and fat free cheese. Top with a bit of fat free honey mustard or your favorite dressing. Great to eat on the run. Sugar free pudding I buy the Jello sugar free cook and serve pudding - you can use instant, but I prefer warm pudding. Use skim milk when making the pudding. Top with fat free whip cream. This would be my carb...just add your favorite protein. THis could be dessert after a chicken breast and salad. Spicy Mongolian Beef - very yummy - good enough for guests! IN a bowl, make marinade by combining: 1/2 tsp fresh ginger 1 pkt Splenda sweetner 3 TB low sodium teriyaki 2 tsp water 1/2 tsp crushed red pepper - adjust to taste THen slice 2 pounds of very lean sirloin. Marindade for 30-60 min. While meat marinades: crush 2 cloves of garlic slice 1 lg onion slice 1 green pepper Heat non stick pan or wok. Toss beff mixture in ver hot skillet or wok for about 1 minute. Then toss in garlic, onion and green pepper. Stire till veggies begin to cook but remain crisp. Serve hot.
