Guest guest Posted July 28, 2011 Report Share Posted July 28, 2011 Hi , Here's a nice recipe for broccoli soup that calls for frozen chopped broccoli, but there's no reason you couldn't use fresh. Hope you enjoy this! BROCCOLI SOUP1 10 oz pkg frozen chopped broccoli (or equivalent fresh)1 C chicken broth1 tsp nutmeg1 medium onion, chopped1 10 oz can cream of mushroom soup1 T butter1 C dairy sour cream Cook the broccoli and onion in the chicken broth with the nutmeg until veggies are done (for freshest color, don't overcook the broccoli!) Pour into VM. Add mushroom soup and butter and blend until smooth. Adde sour cream and blend for 20 seconds - or stir in by hand. Serve hot or cold. 4 servings. Recipe can easily be doubled or tripled. And here's a similar recipe for Broccoli Bisque: BROCCOLI BISQUE2 10 oz pkg frozen chopped broccoli (or fresh)2 14 oz cans chicken broth2 T butter1 medium onion, quartered1 tsp saltdash pepper1 tsp curry powder (optional)2 tsp. lime juice1/4 C sour cream1/4 C heavy cream Cook broccoli, onion, butter, S & P in chicken broth in a covered pot until veggies are tender. Blend one-half at a time in the VM until smooth. Stir in curry powder, lime juice, and creams. Chill at least 6 hours. Garnish with lemon slices, parsley, or a dollop of sour cream. HTH to use up your broccoli harvest! I'm sure you could freeze both of these if you leave out the sour cream and cream until you defrost it.
