But using rules or laws as excuses not to do what is right is reprehensible to me. Is it right for (sounds like a teenager) the individual described to do this? No, it isn't. But, I certainly didn't appreciate the value of a dollar fully when I was in my teens and 20's and wore designer jeans and drove a sports car that I couldn't afford. I wondered if you put all ingredients in at once and if it emulsified doing it that way. Or do you put the egg, in and drizzle the oil in as we usually do? terry ps I do a Chipotle Mayo using 3/4 C peanut oil and 1/4 cup olive oil to 1 egg and add lemon juice and a healthy big pinch of ground chipotle. I love that used on broccoli slaw with apple and pecans. So good and it's good the next day unlike the cabbage slaw which really isn't good as leftover IMO. I do the dribble with the Bosch but it's a lot easier with the Bamix--just let the yolk, vinegar, and mustard settle to the bottom of a beaker, gently insert the wand, and you have mayo in <30 seconds. I've never tried it with the Vitamix but I'd bet anything that dribbling's involved. BTW, Pouret white wine vinegar makes SLAMMIN' mayo. I also use peanut or (better yet, rice bran) oil with about the same proportion of olive oil that you use. I use the lower variable speeds (it does not require high speed) and drizzle the oil in just like you would in a food processor.
