Guest guest Posted July 21, 2011 Report Share Posted July 21, 2011 Recipe for Chia MilkSubmitted by: Lynn Recipe Ingredients: 2 tbs chia seeds 1 tbs walnuts or pecans (pecans are sweeter) 1 tbs sesame tahini 1 tbs honey 6 dates Dash vanilla Cooking Directions: 1. In a glass jar, soak nuts and seeds in 1 1/2 cup of water overnight. In the morning, add another 1/2 Cup of water and blend. Then add tahini, honey, vanilla, dates and another 1/2 cup water and blend till Smooth. This makes 2 1/2 cups. (You can leave out the dates, if you don't want the milk so sweet.) It's on the order of a nut butter but is much thinner in texture and shaking up the jar should suffice to mix it (you can also keep it on the counter without refrigeration). I guess people use whole sesame seeds but it's a different animal altogether. The very best brand that's readily available, I think (and I go through a lot of tahini), is Al Arz from Nazareth; Roland relabels it and sells it under their own name. Second-best is probably Al Wadi from Lebanon but the difference between the two is vast; Al Arz is a smaller outfit and produces a more artisinal product that I have to keep myself from eating out of the jar (NO bitterness). My friend Carol's husband (from Norwalk) really likes the Al Wadi but at the time I recommended it I didn't realize that what Roland sells is actually Al Arz. Al Wadi just might taste better in hummus because it's more robust and a little bitter; it can holds its own. Al Arz/Roland, on the other hand, makes fabulous tahini dip (which is just called "tahini") and is especially good in a Middle Eastern sweet called "dibis w'rashi" ("dibis" is Arabic for molasses and "rashi" is another name for tahini). You mix equal (more or less) amounts of tahini and grape, date, or carob molasses (not pomegranate--vile combo). It's delicious and very healthful.
