Soups?

I've just recently purchased a vitamix and I love it! (I'm in the Uk) However

I've tried a couple of soup recipes from the book and although they were hot

they tasted too 'raw' and very strong (had garlic, onion tomatoes etc). So I've

come the the conclusion that maybe some ingredients should be cooked first. Does

any one have any really tasty soup ideas? Mostly vegetable I think (not really a

fan of meat soups). Thanks for the help!

When you make soup in the vitamix raw ingredients like garlic and onion and peppers need to be used in small amounts or they will overpower the rest of the ingredients. Some people myself included make refrigerator soup in which case many of the vegetables used where cooked and had for dinner on previous days. Hi Debbie? (pulled that name from your email address…)Other than roasting, I can only think of heating the blended soup on the stove until the tomatoes were cooked. You might want to check out my FAQs about removing "foaminess" if you're blending tomatoes, as they get Quite foamy…

Thanks everyone for the suggestions, my only other issue is raw tomato. The first soup I tried to make was just a simple tomato soup and the problem was the tomato just tasted, well, raw. I can't abide the taste of raw tomato and only really use them in cooked sauces. Other than roasting them first any other tips? Thanks

To make soups I use a steamer - not an electric one, the type like a saucepan

with a basket on top. I put all the veggies in and steam them for about six or

seven minutes so that they are still quite firm. Then I put them in the Vitamix

along with the water from the bottom of the steamer and a bit of organic stock

powder. All it takes then is a quick blast on high and it's done.

You can roast the tomatoes (along with the other veggies) first with my foil pouch method. :)

(who doesn't like raw tomatoes either)

I'm with you on using the steam water. I always drink or find a way to use left over steam water!
