Guest guest Posted July 10, 2011 Report Share Posted July 10, 2011 I just scoop the watermelon and place a spoonful in each space of an ice cube tray (they help keep the scoops separated). It took about a tray and a half to equal 3 cups. I had some left over so froze some more to reach 3 cups again.There is plenty left after freezing. They touch and sometimes there are 1.5-2 layers, but they are easy to break apart for me if they freeze together somewhat. I've done this with cucumbers, grapes, bananas, and halved oranges too. I find this easier than freezing in single layers on a cookie sheet because I have virtually no room in the freezer. I just lay the bag flat-ish wherever I have room. When frozen, I can then shove the bag wherever it fits. I also washed and dried baby spinach, packed a gallon bag, and froze it. I crush the spinach a bit with my hands and take what I need for green smoothies. This makes it easy for me to keep a lot of different things on hand for green smoothies and I don't have to use ice cubes. And after I use up the fruits, I just refill with new fruit and freeze if I want to reuse the bag. I have also pureed watermelon and frozen it in ice cube trays, but doing the bag freezing is easier and less work. .... Plus my eyes are sometimes bigger than my stomach when I shop so I freeze what I can't eat quickly. Today I made a green " ice cream " with the frozen spinach, frozen cucumber, frozen watermelon, frozen grapes, frozen banana, hemp powder, 1 fresh carrot, water, and cran-raspberry juice. Ah yes, I also froze cut up fresh carrots as well in a bag. I bought a 10 pound bag which didn't fit in my refrigerator crisper drawer very well. I meant to make carrot juice, but alas, big eyes again. ....
