I peeled, then sliced english cucumbers into one inch half moons and put them in a plastic baggie in 1-2 layers. Lay flat in the freezer. Easy to break apart if you don't do more than 1-2 layers. I use them in my green smoothies. I don't know about storage time as I don't have such a large batch.
