One of the main reasons I purchased the Vita-Mix was to make my own Almond Butter. I tried it yesterday and although I didn't completely fail, I felt that there is much improvement needed to get it to where I would like it. I would prefer to make it from 100% Raw Almonds and nothing else but I don't know if that is possible, given that I would prefer a consistency that is a bit thicker than Peanut Butter. I also don't want to overheat/hurt my machine either. The cooking guide has a precaution to not let the machine run on high for longer than 1-2 minutes. I don't know how far I can push this machine yet so I was looking for some feedback. If anyone has any ideas/tips for me to get the end result I am looking for, it would be greatly appreciated. Thank you all for your time and ideas and I look forward to the day when I can contribute something positive back to the group. Please check the archives; almond butter has been covered a number of times including optimal amounts of nuts to be processed, technique, and the fact that toasted almonds work better than raw. Lea Ann pretty much has almond butter down to a science.
