Shalom Y'all, Happy Sunday!!We don't fry.I make my own tortillas (corn or whole wheat) and I cook them on an ungreased cast iron skillet or griddle a couple of minutes on each side, until cooked but supple, and the surface has brown cooked spots. When cool, I cut them up, brush them lightly with olive oil and sprinkle salt (sometimes cumin and garlic) and bake in a preheated 400 degree oven on lightly oiled cookie sheets. I bake for about 5 minutes (these can BURN really quickly) or until the edges are light brown. Let cool on the baking sheet, the tortilla chips will crisp more as they cool.
