does anyone have a V8 copy cat recipe?

Hi everyone

My name is a and I am a new Vitamix user. My DH and I have been thoroughly

enjoying using our vitamix for smoothies and would like to venture into other

things. I have been lurking around this site for a few weeks and learning so

much from all of you. Thanks for all the great tips!

DH likes V8 juice and we would love to be able to make our own to eliminate the

additives and such. Does anyone have any suggestions as to ingredients? We

found a recipe on a juicing site, and used the ingredients in our vitamix, but

it came out very thick and very unappealing.

we used: tomatoes, cabbage, cuc, kale, spinach, celery, onion, garlic, beet and

red pepper. We blended it all together but we are not sure if we should have

added another liquid, or something. Can you help?

I make V-8 at shows frequently. However, I MUST make it taste GOOD to not only the health conscious person who asked me about it - but to everyone else that comes along wanting a sample because I cannot risk someone's first impression of what a Vitamix machine makes being bad.The key is that people have in their mind what a store bought V-8 tastes like, and THAT is loaded with sodium. I explain to health conscious people that they can reduce or eliminate the sodium at home. But if you REALLY want a V-8 taste alike, you will have to make it salty. Another key is to add something tart (I use lemon).Here are the ingredients from a can of V8 Juice:Tomato Juice from Concentrate (Water, Tomato Paste), Reconstituted Vegetable Juice Blend (Water and Concentrated Juices of Carrots, Celery, Beets, Parsley, Lettuce, Watercress, Spinach), Lemon Juice from Concentrate (Water, Lemon Juice Concentrate), Salt, Natural Flavoring, Vitamin C (Ascorbic Acid), Citric Acid.Here is my recipe (I use what I have on hand at a show - you can use any veggies you like!)1 very small carrot (carrot makes the drink very fibrous)2 stalks celerysome zucchini and yellow squash (1/2 inch wide slices)pinch of spinach (I use a cup at home and the flavor doesn't change with the increased amount, but in a show the color is too yeeeww!)red pepper - about 1/4 of a red pepper5-6 campari tomatoes (in a show I have to conserve ingredients - I'd use much more at home - possibly double esp. when the campari's are very small)1/4 cup of sun dried tomatoes - adds a real tomato flavored "punch" - very necessary when trying to re-create the V8 flavorthin slice of onionsmall clove of garlic1/4 small lemon peeled (critical to get the V8 taste)1-2 dates (sweet is needed to create a great depth of flavor)A veggie bullion cube (this is where the salty flavor comes from)A tbs of Blend It Up Spice - can be reduced or left out if you don't like "spicy" but it is a hit at my shows like this2-3 cups of iceSometimes it is like an ice cream and I have to pound and pound and pound the tamper over and over and over - well, you get the idea :-) but if it starts out REALLY frozen you have to blend a long time to get it "liquidy" and the longer you blend, the more the fiber gets blended. Because there is fiber in this drink, it will never have the texture of a V8, but if you blend the fiber to smithereens like this, it isn't as "gritty" as it would be if only blended for 30 seconds or so with water. If you don't like cold drinks - that's ok - just keep blending until it is the temperature you like! (but still start with ice unless you don't mind the "grittiness").

thanks for the tips Lea Ann...I tried to salvage what I had made the other night

by adding the lemon, bouillion, dates and ice....it helped a little, still not

appealing to me but Hubby drank it, so hopefully he will finish it in a day or

so and I will try your recipe. I appreciate all your help.

Just wanted to remind new members to check out the links section for great

former recipes. Made a V8 this morning with a cucumber and other ingredients.

I don't measure, but for me, key ingredient is a bit of salt taste, from soup

bouillion. I know others need to cut back so everyone make it to your own

taste, but a great alternative to a fruit smoothie.
