Here we doctor up pancakes by using whole-wheat flour and oats, for cakes that are still fluffy yet have a satisfying chewiness that’s actually good for you-sort of. This recipe was featured as part of our Supercharge with Superfoods photo gallery. TIME/SERVINGS Total Time: 45 mins Active Time: 35 mins Makes: 5 large or 10 smaller pancakes INGREDIENTS 1 cup cake flour 1/4 cup whole-wheat flour 1/4 cup old-fashioned oats (not instant) 1 1/2 teaspoons baking soda 1 teaspoon kosher salt 1 cup soy milk 1/2 cup vegetable oil 1 large egg Pomegranate Molasses–Maple Syrup, for serving INSTRUCTIONS Whisk together flours, oats, baking soda, and salt in a large bowl until evenly combined; set aside. Whisk together soy milk, oil, and egg in a medium bowl until combined. Make a well in the flour mixture and add the soy milk mixture. Stir until just moistened, about 40 strokes. Set batter aside to rest while the griddle heats, but don’t let it rest longer than 10 minutes. Heat a large, seasoned cast iron skillet, frying pan, or griddle over medium heat. Test to see if the pan is hot enough by sprinkling a few drops of cold water in it: If the water bounces and sputters, the pan is ready; if it evaporates instantly, the pan is too hot. Using a paper towel, rub the pan with vegetable oil. Ladle batter into the pan: 1/2 cup for large (6-inch) pancakes, or 1/4 cup for smaller (4-inch) pancakes. Cook until bubbles completely cover the top, about 3 to 4 minutes. Flip and cook on the other side until bottoms are golden brown, about 2 minutes. Guest guest Posted May 31, 2011 Report Share Posted May 31, 2011 Virtually EVERY review of the Compact has stated the same thing and since I live alone, I think it's going to be perfect for me. The only thing I don't like is that the model I bought has a pulse feature instead of the park feature and I can't imagine what on earth I'll do with it (on the other hand, "park" is, I think, very clever indeed). I'm truly psyched although I think that if it had been in the budget I'd have gone for the newest DLX, overkill be damned. ) Anyhow, I managed to pick up an extra bowl, caddy, and set of beaters quite cheap so I'm prepared for anything and basking in the knowledge that I won't be stymied by any two-bowl/clean-beaters-needed recipe that comes my way. You're going to really like that baking powder; if you don't find it, order up some Bakewell online--good stuff and GREAT rise. I also have a flaker/roller, but have found that if you play around with the VM, you can get a course grind (similar to steel cut oats) or a very finely ground flour, depending on how long you grind it. My husband loves oatmeal and freshly flaked oats are so much better than anything in a box. I like oatmeal but I don’t love it so I try to put a few oat groats into breads to get the benefits. I’ve even put uncooked oatmeal in smoothies a time or two. What I do love is homemade granola made with the oats that I flake. Poor ....I would be kicking myself too if I had sold my Bosch Compact. I’ve done similar things. Maybe you could find another one on Ebay. It rolls whole grains into flat flakes. I actually got mine here: http://www.wisementrading.com/grainmills.htm You have to scroll way down the page to find it. I have the pasta maker too but I don’t think they would have an attachment for it that would flake oats. I’m betting you will be forced to buy another toy! But I have most of the attachments for both my Bosch Compact and my Bosch Universal. And now I don’t have my KitchenAid because I gave it to my daughter. Not sure where my brain was on that one! Was just going through some things to list on ebay the other day when I came across the Bosch attachments-they are brand new, still in the box! I actually don't like MOST of the attachments for the Kitchenaid though. I do like the grain flaker. Although I'm a big fan of stones for grinding, I'd go with the steel for something like this because, as stated in the copy, it can be used for oily seeds (I'm all for versatility!). FWIW, I'm not all that likely to actually USE a flaker but I'm all about owning as many really cool gadgets as I can get my hands on. Esschenfelder also makes a very cool wall-mounted model but one would have to order it from Germany (they seem to be really into flakers and stone mills). I can remember a big stone grinding mill not far from our house, where we would go with a basket once a week to buy grains. I remember being fascinated with the big water wheels and stone grinders. I am not sure if it was corn or wheat they milled (or both). I will ask my mother-nice memory. It's one of those gadgets with a drum you keep in the freezer. I saw a nice video for the DLX and one of its attachments is a grater that looks to do a nice job on nuts--it produces something more on the lines of a flour. The Bosch has something similar but it seems that either mixer requires that you invest in a meat grinder attachment that in turn runs the grater. Tempting but kind of an expensive outlay. Since I don't eat meat, I only bought the grinder attachment because it is needed to run the pasta press...which I also have. Just no Bosch to attach them to, I SOLD the meat grinder and food processor attachments for the Kitchenaid, which sits looking pretty, but rarely gets used, but HEY, it's RED! , ROFLMAO! I think this has come up before but for the ultra-serious home baker of comfortable means, the Retsel Mill-Rite is supposed to be the ne plus ultra of home mills (although nowhere near as cute as the KoMo Fidubus): http://www.retsel.com/ (Bren, they come in RED). They make them to order (small, family business) and it's supposed to take forever but they're supposed to be the best.
