Guest guest
Lea Ann, I should clarify too that the tapioca gel is great in thicker smoothies and such, but not so much in thin "milks"-that's where it tends to get sticky, but flax gel does GREAT for adding body to thinner liquids. From: Robin <rsmallen@...>Subject: Smoothie Advice for Honey Thick Liquid Diet Date: Tuesday, May 17, 2011, 8:01 AM Looking for some advice on making smoothies for my husband who has dysphagia. He is able to eat pureed solid foods and liquids thickened to honey thickness only. He may be upgraded to nectar thick liquids later this week dependent on his MBS study. My VitaMix arrives today! I want to take protein rich smoothies to him in the rehab hospital which they've said is fine...as long as none of the ingredients are such that they melt in the mouth to a thin liquid consistency. Examples would be ice cream...or, I'm guessing, the ice in the smoothie. If so, I must thicken the smoothie with Thickit (which is kind of yukky stuff if you ask me). Does anybody have experience with this diet? Did you need to thicken due to the ice? When you drink these nice thick smoothies does it thin down in the mouth due to the ice? Guest guest
Shalom!I also use a super-concentrated powdered thickener called " Glucomman. " I add it to my protein shakes, to nut milks, even to meat juices for instant gravy (I do not use flour) that is gluten-free. It also makes great jelled candies and that is what it is known for. Gluc powder sets up immediately in cold liquids and may clump if not whisked, or put in the VitaMix to disperse. A TINY bit goes a long way, more than xanthan, tapioca etc. And it carries no taste. The powder is derived from a plant (nothing added) in fact, it is the Konjac toor, and it is used to make noodles and candy in Asia. I add just a tiny bit to my protein shakes and it makes them thick and creamy and not release the thickening. It thickens even more when chilled after mixing. Start with the smallest amount possible, let sit to thicken and add more to desired consistency. You can read about it here:http://www.konjacfoods.com/product/1.htmI use it all the time and I consider it an essential for our pantry and long-term food storage. Guest guest
That was an issue I struggled with for some time when I first started making "milks", Lea Ann-trying to get it as creamy as store bought. As much as I love tapioca, it gives a bit of a sticky texture to milks, making them stick to your throat a bit-MOST unpleasant! I find that adding a couple of drops of sunflower oil makes a huge difference-it just needs to be shaken back in before serving. The reason the store ones are so creamy, is that the ingredients they add are homogonized into the product so they stay suspended in it, BUT-that destroys the nutrition that was in them in the first place! I tablespoon of cooked beans works well, but again, needed to be reincorporated before serving-either by rebuzzing it in the Vitamix, or a really good shaking. The MOST important thing I discovered, is that if you get used to your own milks, you no longer want or expect them to have that "creaminess", but that it is really more of a silkiness that you want-easily accomplished with a bit of sunflower oil, or even by adding a Vitamin E capsule (squeeze it into the liquid, discard the gelatin cap) Flax gel works great as a thickener. From: Robin <rsmallen@...>Subject: Smoothie Advice for Honey Thick Liquid Diet Date: Tuesday, May 17, 2011, 8:01 AM Looking for some advice on making smoothies for my husband who has dysphagia. Guest guest
Konjac flour does work great as a thickener. Agar-agar is similar (it is a seaweed) that works great for "gelling" things similar to jello. I quit using either since I couldn't find sources that didn't come from China (that is just a personal issue, not saying no one should) I have since learned that I can make tapioca perform in pretty much the same way, depending on how I process the tapioca in the Vitamix. Guest guest
AMAZING! and THANK YOU!!! THIS IS THE MAIN INGREDIENT in the PGX supplement that I take!!! I just bought some from the link you provided (for $25 including shipping) and that bag is what 10? 20? times the amount that I get in one bottle of this: http://www.amazon.com/Natural-Factors-Wellbetx-Soluble-capsules/dp/B000AMXR7Q (for more $ if you include shipping!)I'm SO EXCITED for it to arrive! Now I don't have to be stingy with the remaining pills in my PGX bottle and I'm going to open a couple of them and dump them into my next smoothie to see what happens!THANKS AGAIN! Guest guest
I did the math. The bag I bought at Vickilynn's recommendation is a 455% increase in volume of soluble fiber over the amount of fiber in the PGX supplement. The PGX bottle contains 90 grams, and the bag I bought has 500 grams! Woo Hoo!My middle son has AWFUL carb cravings. I'm not even going to tell him what I'm up to - I'm just going to get this into his smoothies and FILL HIM UP (a reduction in sugar/carb cravings and lowering high blood sugars is one of the frequent testimonies about this product). Now I have to figure out how I"m going to get him to take it. He does not like smoothies or even ice cream!!! (can you believe that?) Guest guest
hehehehehe! Love the enthusiasm!!I got excited as well when someone on my low carb message board told us about this thickener that has no cals, no carbs and no taste. And the thickening power was super-concentrated. I started using it in my daily protein shake in the VitaMix and was amazed at how little it took to thicken! And it keeps me fuller longer. Now I use it for the whole family, as I said, for making gravy from drippings. I even split our family's pure maple syrup, thinned it with a little water and added the gluc powder to make a thick, almost jelly-like consistency to save money while keeping our nutrition. I use it for all sorts of things and it works best when I use it mixed very well in cold liquids (sets up immediately), mixed in the VitaMix- (makes it very smooth no clumps!!) then added to warm liquids for even more thickening, or added to cold liquids, such as homemade almond milk and chilled - gets nice and thick. SO many uses and it's cost effective because it's so concentrated.Vickilynn HaycraftMicah 6:8http://www.realfoodliving.com http://www.blog.realfoodliving.comhttp://www.examiner.com/housewares-in-national/vickilynn-haycraft http://www.examiner.com/family-preparedness-in-national/vickilynn-haycrafthttp://www.bepreparedradio.com/category/prepper-podcasts-health/get-real-get-prepared/ On Tue, May 17, 2011 at 9:52 AM, Lea Ann Savage <lsavage@...> wrote: AMAZING! and THANK YOU!!! Guest guest
I agree about the "wanting it to be the same" concept. I don't need for it to be the same AT ALL. It is my picky (and I mean PICKY) kids. Guest guest
This is a good idea . To be honest, I'd given up. I used to fight and fight to get veggies and fruits into them, but it's 3 on one (and sometimes Dad brings crap into the house so there was even that to contend with). Guest guest
Add to my difficulties in that my son is ADHD, Bipolar, OCD, and several more. When he was young he ate almost anything I put in front of him (except mushrooms) but when he turned teen, (and changed meds) he began to totally dislike almost all veggies (he will eat raw carrots and celery once in a while and a lettuce with dressing salad as long as I don't put tomatoes or other "weird"stuff in it). He often makes his own dinner because he does not like what I fix. I made brown rice last night because I was out of spaghetti and had marinara sauce and meatballs from Costco. He refused to put tomato sauce over rice, so ate meatballs over rice with orange sauce (full of sugar) from Costco. Refused the coleslaw I made, though sometimes he will eat that. These days I make an effort to make food he will eat a few days of the week and let him fix his own (often mac and cheese or pizza) the rest because if I don't let him eat a meal of what he wants, after we go to bed he will eat all sorts of strange stuff which are things I have bought for use in small amounts in stuff, such as an entire large jar of peanut butter, or a entire bag of marshmallows or chocolate chips or a entire month supply of corn chips I have purchased for my husbands lunches (husband weighs out his carb portion). I thought picky eaters grew out of it, but some don't. He outright refuses the fruit and veg smoothies, won't even taste them. I realize some of the problems are the meds, but not much I can do but try. Velda On 5/17/2011 10:40 AM, Lea Ann Savage wrote: Oi Vey! Guest guest
You're not alone, Lea Ann. I have one daughter who ate only cheese and bread for a good year. Prior to this she was found to be allergic to over fifty foods. So she gravitated to the cheese and bread diet as it was the only thing that didn't upset her stomach. Another daughter will eat what I make and say it's "OK," but that she wouldn't make it for herself if given a choice. My children all followed their dad's eating habits, not their health nut mom! ;-)MarthaFrom: Lea Ann Savage <lsavage@...> Sent: Tuesday, May 17, 2011 12:48 PMSubject: Re: Thickening Home Made Almond Milk - was - Smoothie Advice for Honey Thick Liquid Diet This is a good idea . To be honest, I'd given up. I used to fight and fight to get veggies and fruits into them, but it's 3 on one (and sometimes Dad brings crap into the house so there was even that to contend with). But My oldest and youngest Want to please Mom and will at times eat veggies to get me off of their back.My middle son has lots of issues. I bet that if he were getting better supplements he'd do better all around. It is a real battle to get him to take supplements too however. Not that he can't swallow them, just that he always says "later" then conveniently "forgets"… Blessings,Lea Ann SavageSatellite Beach, FL(321) 773-7088 (home)(321-961-9219 (cell)))><'>www.VitamixLady.comwww..com<))>< On May 17, 2011, at 12:40 PM, Berry wrote: Have you considered a vitamin deficiency? Thanks for any and all advice! Robin www.nanashouse.wordpress.com
Guest guest
I'd really, REALLY prefer that you kindly keep any mac-and-cheese bashing to yourself. (I probably shouldn't admit this but I don't love it as much as I used to...probably due to the cheese component of our weekly wine-and-cheese parties.) Re: Thickening Home Made Almond Milk - was - Smoothie Advice for Honey Thick Liquid Diet He sounds related to my son who prefers mac and cheese or chicken tenders or pizza over all else. My son is 31.
