Tonight, I put a tray in the oven with several cups of the veggies, plus 3 Campari tomatoes halved, a few cloves of garlic, and half dozen or so mushrooms, sprayed with evoo and roasted at 425 for about half an hour. Then followed suggestions previously posted here using evaporated milk and chicken broth and some cheddar and parmesan chees. Put most of the veggies in and VM'ed them until steaming. At last minute added remaining veggies and only just ground them chunky. Husband got only part way through first cup and said, " You gotta do this again " ! He loved and and so did I. Thanks to those who suggested the Normandy veggies for soup. Almost forgot, also used a few shakes of the Blend It UP spices. Velda Quote Link to comment Share on other sites More sharing options...
