I made a fabulous vegan mac n cheese last night with cashew butter... I got it here: http://allrecipes.com//Recipe/vegan-mac-and-no-cheese/Detail.aspx I DID change it a bit since I didn't have the yeast flakes (I added a tad of soy sauce) and red peppers so I used sun dried tomatoes. LOL - I did notice I had to add quite a bit of salt and it's certainly NOT fat-free, but boy oh boy, is it good! Everyone is sure cracking me up 'round here... Guest guest Posted April 10, 2011 Report Share Posted April 10, 2011 Well, " cheesy " may be an overstatement, but with enough turmeric, it looked good and after adding quite a bit of salt, it was yummy! My hubby thought it was much better after baking - the turmeric has to mellow out. Oh, and I also added half lemon juice and half citric acid and water (citric acid is in the indian or kosher aisle of the market) which gave it the 'cheddary' tartness imho. I definitely think this recipe is a good starting point for the creative! Let me know what you come up with!
