Guest guest
I'm trying to figure out what you did wrong. My stuff starts making its own SCOBYs even in the bottle. Did you use the plain, unflavored GTs? It's also helpful if you can find a bottle that looks like it might already be making its own. I wish you lived close, I'd be happy to give you several. I need to brew up some tea tonight; tomorrow morning is KT Day. Re: OT - Good Kombucha link Thanks Lea Ann, Round two of SCOBY making will start tonight. My first attempt just didn't work. Guest guest
, I think I was impatient and my original brew was too warm when I started, also I think the paper towel didn't breathe enough (this time I think I'll take an old but clean thin t-shirt - no mens hankies around this house), and I think my tea to GT ratio might have been off (too much tea). So this time I am measuring things and taking my TIME. And, now the weather is warming up so 'room temperature' is about 66-70 versus in the 50s, LOL! I did use unflavored plain GT. I wish we lived closer too! On Mon, Apr 25, 2011 at 4:24 PM, <kareningotham@...> wrote: I'm trying to figure out what you did wrong. My stuff starts making its own SCOBYs even in the bottle. Guest guest
Why are you making KT if you don't yet have a SCOBY? Forget that YouTube BS--grow your SCOBY first, THEN make start making KT--I guarantee you success if you follow my instructions to the letter (they're somewhere on the home page). Guest guest
Don't do that. Put a bottle (more or less) of GTs unflavored in a jar, securely with a hanky or paper towel or whatever will keep critters out, evaporation low, and will allow it to breathe, put it in a dim place, and leave it alone for a week or two. Your SCOBY will begin to develop REALLY fast; just don't jostle the jar and do allow it get thick before brewing with it. Don't worry that it seems small compared to your brewing jar when you use it the first time--it'll float and new growth will occur around it. Pretty soon you'll be swimming in SCOBYs and trying to palm them off on your friends. Re: OT - Good Kombucha link Thanks Lea Ann, Round two of SCOBY making will start tonight. Guest guest
Oh, heavens no. Our Peggy got me into it--I'm just her loyal serf. She's the real royalty here. You don't want all the liquid to evaporate because you'll be left with a dead, dehydrated SCOBY. A cupboard is a good spot, especially if it's on a shelf that allows you to peek into the sides of the jar without disturbing it. You'll see--you're going to have a SCOBY before you know what hit you. Re: OT - Good Kombucha link Thanks Lea Ann, Round two of SCOBY making will start tonight. My first attempt just didn't work. Guest guest
No need to feel silly because you got so-so advice. You're going to be up and running before you know it. Make sure you have another bottle of GTs plain on hand to bring the pH down when you set up your first brew. In the meantime, get familiar with my method (which I found online and very gently tweaked to my own specifications) on the home page. Believe me, if I can do it, ANYONE can do it. It's very easy and it becomes routine quickly. Re: OT - Good Kombucha link Thanks Lea Ann, Round two of SCOBY making will start tonight. My first attempt just didn't work. Guest guest
Isn't this pretty much the method you used before? Please, just do as I suggested and I PROMISE you'll have a SCOBY really fast. My method works--I know this from personal success. Most of us here like to experiment with recipes, however, please be advised that KT leaves very little wiggle room for deviation. You MUST use tea. Not herbals/botanicals/tisanes--TEA, period. You MUST use white sugar and you MUST use enough to feed the yeast (this is not about you, the brewer). My recipe is what works for me--if you feel you must play, use more sugar, not less. Many recipes state 1/3 cup sugar per quart of tea (some recipes suggest 1/2 cup), I use the same amount of sugar per liter because it's a little less sweet and I wouldn't dare use less than that. And finally, you MUST add some brewed KT (or, in a pinch, white DISTILLED vinegar ONLY) equal to at least 10% of your volume--this lowers the pH. So if your batch is 3 liters, add an extra 300 ml of KT for a total of 3300 ml/3 l + 300 ml. The wiggle room here comes from slight deviations in the amount of sugar and the type of tea used. I would never use expensive tea for KT; I brew 3 liters/batch and use one tea bag for each liter of water. I brew all three tea bags in a single liter of water and then add an extra 2 l of water when I assemble the recipe. Please see the home page for detailed instructions and please, follow the instructions exactly--they really do work.
