Guest guest Posted April 22, 2011 Report Share Posted April 22, 2011 You shouldn't use the SOAK water-dump that off and rinse well, then you can top it up and soak for a few more minutes and use THAT water. The reason is, the soaking creates anabolic waste and is the purpose for soaking in the first place, so getting rid of the waste is a good idea. Today I made almond milk in my vitamix. I soaked 1 cup of almonds over night. Used 1 cup of the soaking water and 2 cups of tap water and blended it all up. I drained it through cheese cloth (need to order a nut bag). How long did you soak? Leann, I always buy my almond milk unsweetened so I didn't add any thing to it to sweeten. I don't like flavored milks either so don't want to add vanilla for sure. Especially with rice milk - I like the rice milk fiber. Knowing what it is intended to do, I personally do NOT use the FIRST soak water, as it contains the waste matter that it has drawn out of the nuts or seeds. I often do a short first soak (couple of hours), then rinse and put fresh water in. I doubt there is too much being lost in the way of vitamins, since the nuts are absorbing the water, so it is retained in them. I think it is all a matter of preference, but I consider it waste water. I would NOT use soak water from beans-it does contain the enzyme inhibitors and should be discarded. Today I made almond milk in my vitamix. I soaked 1 cup of almonds over night. Used 1 cup of the soaking water and 2 cups of tap water and blended it all up. I drained it through cheese cloth (need to order a nut bag). What I have is almond milk but it smells and tastes like almond extract. Is that how it's supposed to be? Just use 1/4 - 1/3 cup nuts to for each 8 oz. water and don't flavor/sweeten your milk until after you've strained it. BTW, if you're using your milk in smoothies, you might not want to bother straining (I don't). According to the QVC Whole Food Recipe book posted on the links page of this group 1 cup of almond or cashew milk has 239 calories and 21 grams of fat. The recipe and nutritional information is on pg 56. /links Speaking of this cookbook I compared this Whole Food recipe book to the Create Recipe Book I have and other then the last two chapters they are exactly the same. In the Create book instead of the Children's section it has a Raw Food section. The Create book also has an additional chapter of recipes from different chefs. In Vickilynn's specifically, you will notice that not everyone strains their almond milk! The fiber settles to the bottom.
