Is it ok or good even to reuse the soaking water from almonds in the milk?

You shouldn't use the SOAK water-dump that off and rinse well, then you can top it up and soak for a few more minutes and use THAT water. The reason is, the soaking creates anabolic waste and is the purpose for soaking in the first place, so getting rid of the waste is a good idea.

I just posted in another thread, but you shouldn't use the soak water, and unless you are on a well, tap water isn't a great idea either. How long did you soak? It seems that many think not but I've always used my soak water and have lived to tell about it.

I am on a well. I soaked probably for more than 12 hours. It is strong. I will

try it again.

I always buy my almond milk unsweetened so I didn't add any thing to it to

sweeten. I don't like flavored milks either so don't want to add vanilla for

sure. I will try again with some changes.

If you don't strain it the fiber falls to the bottom which for many is not a problem - they just pour off the top. Especially with rice milk - I like the rice milk fiber.

There is no need to worry, and many people DO use the soak water. Knowing what it is intended to do, I personally do NOT use the FIRST soak water, as it contains the waste matter that it has drawn out of the nuts or seeds. I often do a short first soak (couple of hours), then rinse and put fresh water in. I doubt there is too much being lost in the way of vitamins, since the nuts are absorbing the water, so it is retained in them. I think it is all a matter of preference, but I consider it waste water. I would NOT use soak water from beans-it does contain the enzyme inhibitors and should be discarded.

Oh, it's simple. Trust me, even a chimp could make nut milk. Just use 1/4 - 1/3 cup nuts to for each 8 oz. water and don't flavor/sweeten your

milk until after you've strained it.

BTW, if you're using your milk in smoothies, you might not want to bother straining (I don't).

I found this in google, and it probably is close on the calories

since both are unsweetened. Can;t help you on the straining issue as

I have only put almonds into a smoothie and VM'ed them then drunk

without straining because I don't notice pulp when drinking in a

smoothie.

While almonds are very good for you they do have a lot of calories. According to the QVC Whole Food Recipe book posted on the links page of this group 1 cup of almond or cashew milk has 239 calories and 21 grams of fat. The recipe and nutritional information is on pg 56. /links Speaking of this cookbook I compared this Whole Food recipe book to the Create Recipe Book I have and other then the last two chapters they are exactly the same. In the Create book instead of the Children's section it has a Raw Food section. The Create book also has an additional chapter of recipes from different chefs. Tom

This sounds more like it! The Almond Breeze at 40 calories a cup must have very little actual almonds in it!

There are three Almond Milk Recipes in our files. In Vickilynn's specifically, you will notice that not everyone strains their almond milk! The fiber settles to the bottom. You can choose to shake it back in, or to pour from the top.If it were me, I'd give that method a try at least once, if it worked for you - you would have discovered a time saving recipe! :-)
