Great video, but I thought the whole idea of sprouting was not needing any soil.

Could you get a similar effect just rinsing them?

With most seeds, yes-just soaking and rinsing is enough. Sunflower seeds just get soft though, and will get a very small tail if just rinsed. They need soil to get long, but as you see it happens very quickly. The purpose of the plate on top is to give them leverage to sprout. Are you doing something more along the line of shoots than sprouts? If that's the case, 's right. According to SproutPeople, sunflower sprouts are what they call "soaks"; they're soaked for a short period of time, after which they're good to go. But if you want length, i.e. shoots, you need soil.
