Strawberry Lemonade

Tifanie,

It's really not a recipe, I just made it up.

For 4 servings: I took 4 organic lemons and squeezed them into a strainer

over a blender, saving the juice and pulp, picking out the seeds. Then I put in

maybe half a dozen frozen strawberries (they were large). Of course, fresh

would work, but you might want to make sure you make it ahead of time so

that it can get cold or just add some ice. I added a cup or two of water. And I

used a heaping tablespoon of raw honey which made a very slightly sweet,

tart drink. My girls added another tablespoon which was split between the

remaining three servings and they thought it was terrific.

I have made this before in a larger quantity for a sleepover and have been

pestered ever since by my daughters' friends to make it again. I think that time

I used white sugar but I prefer the raw honey and found that the flavor wasn't

overpowering.

Thanks Kathy, I can't wait to try it. Maybe I'll stick my fresh strawberries in

the freezer for awhile just so I can save a little time having to refrigerate

the whole works. You have had some really great ideas lately that I have been

trying. Another one I really enjoyed was the Monte Cristos I think you called

them. I always enjoy trying and learning new things from this group. I must

admit that some of recipes you've posted have become favorites. thanks for all

the effort you put forth sending them to all of us to enjoy.

I had not used the lemon with peel on until yesterday. In past I had

juiced the lemon (held it over container and squeezed with my hand).

Yesterday I sliced off a hunk about half inch thick of a smallish

lemon from my tree and ran it with all the rest of the smoothie

ingredients. I loved the lemony flavor, a bit more intense than just

juice, but I did not detect any bitterness. But I did drink the

entire smoothie within a half hour or so.

If you use the peel of the lemon a little bit of lemon goes a

LONG way. I never use more than a 1/4 wedge if I'm including

the peel. I often prefer the taste if I use 1/2 of a peeled

lemon. (fiber and all)

and it's soooo good! Thought I'd share the recipe... I use sugar, but I'm sure

you could use whatever sweetener you wanted.

1 large lemon (peeled)

3-4 frozen strawberries

3-4 tbsp sugar

2 cups ice

Blend until smooth.

When it gets warm again, I'm going to try it with limes.

My son makes this (sans the strawberries) almost every day - he LOVES "lemon icy"

Cherries with limes (as in "rickey")!

I think I'll retain a bit of the rind but lose the seeds. Do you use any water?

I made a " cherry rickey " this afternoon with a peeled lime ( I'm learning) 7 or

so frozen cherries sweetener water and ice.

I liked it better than the strawberry lemonade and an instant hit with my

husband and daughter. Ready for summer.....waiting for warm weather in

Wyoming!!

I made this today with some liquid stevia... it was wonderful... took the lemon peels and strawberry tops.. processed with some water to compost and poured them on a couple of plants... I LOVE my VITAMIX.... :)

I just made it for us and it's really good. Refreshing and of course not many

calories. I took his glass and he said Oh, he wouldn't want dinner then I

told him it's was mainly frozen water. I used about 6 smallish to medium frozen

strawberries. I added a little water, about 1/2 to 3/4 cup just to get

everything going. Before that it wanted to be a sorbet. :)

I had just put together Ina's Lemon Chicken Breasts and I had one lemon with all

the zest gone, thus Strawberry Lemonade. TaDa.

thanks so much for the recipe. This will be great this summer when it's beastly

hot.
