I made a fabulous chocolate today. Light like a mousse. Took maybe a full

minute.

Into the VitaMix goes

6 ounces of chocolate chips (either semi-sweet or milk)

1 egg

1 T of good vanilla extract

Heat 1 cup of heavy cream just before boiling (I did it in a measuring cup in

the microwave)

Blend the first three ingredients until smooth. Then drizzle in the hot cream

with machine running as you would making mayonnaise.

Pour into individual custard cups and refrigerate until cold and set.

Pam, I put everything in, save the hot cream. Started out on variable, just moved it up - that took about 4 or 5 seconds, flipped it to the hi setting and streamed in the very hot cream. I believe the dessert us called 60 Second Chocolate Mousse. It sure doesn't take longer to do the recipe. I bought some hard chocolate cups to serve it in this Friday to my Soup Group. You *know* it's good if I serve it to guests. Next time I'll make my own chocolate cups...maybe. It's kind of diddly to do and the purchased ones are very pretty.
