I find the broccoli is a bit too raw tasting for me, even when the soup is steaming hot. I steam in microwave (yeah, I know, I need a steamer to avoid micro, it's on my list). I am guessing if I got the frozen veggie mix from Costco (Normandy I think someone called it), they are blanched so would not have quite the raw taste. Is that right? I usually only steam until the color turns bright green and the texture is al dente. Yes, the Costco Normandy mix tastes sweet. I often steam a large batch, then store it in the fridge in a mason jar, so that part is already done when I am ready for soup. Steamed veggies will keep for a good 3 or 4 days in the fridge, and since they will become soup anyway, no worry of them being "soggy". I just lightly steam and drain well before storing. You can also blanch and freeze them into individual portion sizes, then start your soup from frozen. Right now I am "drinking" broccoli cheese soup from the cookbook. Very good. Steam with only a very little bit of water in the bottom pan, then toss that in with the steamed asparagus before blending.With my cauliflower "mashed potatoes" I wait until the steam water cools then drink it - it is surprisingly sweet! Lots of nutrients and flavor; just use it as part of the liquid called for in the recipe. I steam the broc lightly with a little veggie stock, then just blend it in the VM with a little sea salt-you can add a generous handful of sharp cheddar, if you want it cheesy. I find that it is plenty "creamy" enough without adding any dairy, but you could add a splash of heavy cream if you are so inclined.
