Here's a recipe I use:

1/3 cup oatmeal blended to powder form

1/2 cup cottage cheese

2 egg whites

1 tsp vanilla

1 tsp peanut butter

I mix it all up in a blender but don't blend too long. Sometimes

I'll add 1/4 cup of canned pumpkin also. If it is too runny for you,

you could probably increase to 1/2 cup oatmeal.

Also if you go to www.leanandstrong go to libraries and pics and the

cooking library you'll find quite a few protein pancake recipes.

The recipe I use is:

1/3 cup oatmeal blended to powder

1/2 cup cottage cheese

2 egg whites

1 tsp peanut butter

sweetener to taste

vanilla

Blend ingredients and cook like pancakes. Sometimes I have a hard

time getting the middle " done " without burning the pancake so I trick

I've learned is to cook up a batch and then pop them in the toaster

for reheating. I top them with sugar free maple syrup or brown sugar

twin and cinnamon.

I tried these but was so frustrated! Goopy, goopy mess. Anyone have

any tips for cooking these?

Maggie, would you repost the recipe for the pancakes?

Also, the cottage cheese pancakes I've tried before are really gooey

on the inside....am I not cooking them long enough or what?

i tried Maggie's pancakes and they were great. They were even better

later in the day when I put them in the toaster and they were nice and

crisp.
