They have such a creamy taste, different from their sister red kidneys. They are not actually great northerns, but they are close and I have seen them marketed as such-there really is only a subtle difference in great northerns, so you could easily substitute those. Make a wonderful creamy base for sooooo many things! I played with several new varieties of beans this past year, and plan to try even more new ones this year. Love my beans! One of my favorite things to do is shell beans and peas, isn't that silly? Could sit out in the sunshine all day long doing that very thing! I acquired my own cows for milk , and tracked down sources to buy things wholesale. There isn't much I don't have access to, and am, in fact, considering starting another co op of my own-just not sure I want to commit the time to it, but many people order from me, since I offer things at my cost, plus shipping. Happy to extend that offer to anyone on the group (mainly for grains), but shipping is usually quite a booger! Best to find local sources, if possible. I have a wholesaler license, so that makes it a bit easier for me, and I have already established some really great contacts that I can order from. Again, I suggest making friends with someone who owns a small restaurant-they are usually HAPPY to order for you, since they often don't have enough of an order to meet a minimum order requirement. Don't be afraid to ask!! Yes, I do see Great Northern beans in stores, but they are not same shape as White Kidney. They Can fool other people but not me, LOL If I did not have a entire acre of ground that is all hard clay, I would do more garden. I keep trying but it is not easy when it is just me, husband can't help and son won't. Problem is getting husband in the mood and health to help build beds. I built one last year and planted 3 times and each time the seedlings got about 3 inches tall and were doing well, then I would come out the next morning and every single seedling was gone. I never saw what got them, be it insect or squirrel? (have not seen a gopher who could dig our soil). I did much better with my left over tree buckets, but only have a limited number of them. My best tomato plant and my basil are still limping along in the sunroom. It is time this week to move them out as we are past frost, and hopefully past heavy rain and wind.
