Lunch Smoothie - veggies - idea?

I am working from home and I have no more solid food leftovers for lunch, but I

do have a lot of random vegetables that should be used. Can you please give

some insight if the following will be any good together?

4 small tomatoes

a lot of kale

a few handfuls of spinach

a green pepper

lots of celery

cabbage (purple and green)

avocado

I also have fruits but I dont think I need to mix any with these.

Is there anything in that list you would not include - I probably will save the

avocado for a snack (just whole with some salt) later today.

All of that sounds great and it will turn out like a "green tortilla soup" (if you use the Blend It Up Spice) The avocado though will make it very thick and pudding like. I'd use a little bit, dice it for a topping, or leave it out. See - isn't it amazing what you can do with leftovers? I drink "Green Tortilla Soup" for my lunch/dinner break when I am doing shows. Ugly, but has the same taste as the tortilla soup and I want the extra greens :-) In the summer months when I am hot I drink my "Cold Green Soup" (which is a variation on a blended salad). This recipe is listed on my recipes page...

While I realize where I am , I would probably make a massaged kale salad

out of that. mmmmmmmm My smoothies are for breakfast.

I just made kale chips for the first time tonight. I bought a large bunch of kale at the farmer's market yesterday, not realizing that my husband had bought some already. So I decided to make chips as I've been reading about them for awhile now.Tear the kale into bite-size pieces.Put in a bowl.Drizzle with a bit of olive oil or other oil of your choice (I used coconut 'cuz it's SO

good for you and I love it)Spread out on a parchment-covered cookie sheet.Salt or herb to your taste.Bake in a 250 oven for 25 minutes or so.SO good and so easy and a terrific way to use up extra kale. Apparently

kids love these - keep 'em busy tearing the kale into pieces with a promise of the finished chips in their bowl!I had some truffle salt and used that. Outstanding!Peggy

Sorry...should have mentioned that the chips get very fragile and crispy. That's one reason you should make the pieces one-bite size. If you have to bite twice, they'll shatter all over the place.

I first learned about Kale chips from a dehydrating group. I use my

Excaliber to make kale chips. On the other hand, my favorite use of Kale

is in massaged kale salad, second favorite is steamed kale with garlic

and onion and a bit o vinegar.
