Try adding a TINY pinch to your bottles before capping them. BTW, are you sure you're feeding it enough sugar? I use 1/3 cup for each liter of brewed tea. Guest guest
FORGET THE VIDEO. You're STARVING your yeast. WHITE SUGAR, 1/3 cup per liter of sweetened tea. Forget grape juice altogether. Just make one plain batch according to my instructions but make sure you add either 4 oz. of unflavored commercial KT or the same amount of distilled white vinegar. Your current brew isn't KT and it's not going to bring the pH down to where it should be. Once you get some proper KT going, you can worry about flavoring it. Guest guest
Hey, I didn't get here by myself--I had help, too, not to mention a gentle nudge from Peggy. It's only proper to "give back" and hope your recipients will do the same. Keep the chain going! I want to see you get proper KT going. Seven days + 12 hours or so initial brewing (that's what works for me), then three days on the counter to carbonate. Don't add any extra sugar to the bottles--just see what happens doing it this way. I think you're going to be happy with the results. Guest guest
Thanks for the clarification. I bought a bottle of organic raw KT in the health food department fridge in my local grocery and am going to share it with husband to see if we even like the stuff. I am not a big tea drinker when it comes to regular tea. I do like green tea but mostly drink various herbal only teas (which are really termed infusions I guess). At least I know it won't hurt me to drink KT. I have wanted to use more fermented foods, though I am not brave enough yet to make my own fermented veggies. Guest guest
That's somewhat more than what I use (all things considered) but still, it keeps the yeast well-fed! Guest guest
Do NOT, under any circumstances, try to make KT from herbal tea. It won't work. I've read assertions from people who say it works but I don't believe it. Tea, sugar, filtered or spring water, and KT--PERIOD. And, of course, a SCOBY. Guest guest
Kim, One good way to get fizz from your Kombucha is to put a cinnamon stick in your bottle (not the brewing container). Cap it for a day and be careful when you open it! The first time I did this, I had a gusher! It doesn't give much taste to the KT.Peggy
Guest guest
Kim,Just FYI, KT doesn't HAVE to be fizzy to be good and good for you. In fact, many people prefer it flat, and as many times as not, that's the way it turns out for me. But if you are especially looking for the fizz, try the cinnamon stick as I posted. Also has a very active KT group where there are many very experienced brewers. They could give you the definitive answer (insofar as there is one - I don't really know!) It's the Original Kombucha group.Peggy
Guest guest
Peggy's right, although I always get fizz. Some people prefer their KT flat, and that's fine, too. If that's the case, pull the KT that you'll be using for the subsequent brew from the top of your brewing jar rather than the bottom. Guest guest
That's because it contains its own sugars; this is why (before I realized that Kim was a yeast abuser!) I suggested a very small amount of sugar in each bottle. Try it my way first and see if you get some fizz. If not, CAUTIOUSLY try the cinnamon stick.
