Now THAT'S interesting!

Coincidentally, I got very good feedback on my KT last night from a friend who has never tasted it before--commercial or otherwise. It made me happy because of what use is any of this if it doesn't taste good?

Just search the archives and have a look at the home page--we have a number of inspired brewers here (Peggy got me started last summer). And for fun, grow your own SCOBY from a bottle of GTs!

No no--a SCOBY (Symbiotic Culture of Bacteria and Yeast) is the "mushroom" (it's not, really) used to culture kombucha (usually abbreviated KT).

We nic named it the "fungus among-us" at our house. Lol

Tell how you emulsify it. Just cream it in the VM? Do you add anything to it?

I have a scoby hotel that just sits there waiting for a crisis. Lol

I make 2 gallons every 8 or 9 days. Its just enough for my husband. If I drink it

Too, which I should, I need to make 3. Maybe I will start doing that again. I like it foamy and I like it when its fresh, not a week old. I don't put it in the fridge though,

Not enough room.

Ok, just read something about a Scoby being a sort of mushroom

(fungus). Few years back allergy doc said I was allergic to mold and

fungus. Does that even pertain to this discussion. This kombucha

stuff fascinates me and I plan to research more but don't want to

make my self sick.

Not related to what your doc is talking about. Scoby is a cellulose mat hosting

lots of probiotics that are good for us,

I am doing something wrong with my KT (Kombucha Tea) It never does get fizzy. I think I'm not feeding it enough on the second fermentation. I am adding Welch's juice to the bottle before the KT but maybe not enough. For you more experienced KT folks how much do you use?Kim in OR

Why are you adding grape juice? I don't add anything to my KT after the first brew--I just bottle it and let it sit for three days before refrigerating it. Try pulling your brew for the following batch from the bottom of your container--that's where the CO2-producing yeast live.

"Kombucha tea"; a redundancy since "kombucha" means "seaweed (of a certain type, anyway) tea." Easier to type, however.
