A question though - my husband and I were talking this morning... we've been using natural peanut butter for several years, and it is quite a bit more oily than the peanut butter that I am making in my Vitamix. When I look on the jar of the store bought peanut butter, the only ingredients are peanuts and salt. So why is it so much more oily?I'm also quite gratified by my children asking for smoothies every single day. Right now, my son is HOOKED on "banana milkshakes" (simply frozen banana chunks, 1% milk, a splash of vanilla, and a date). How can I deny him THAT? lol. Make a batch of fresh nut butter, set it on the counter and don't touch it for a month or two and see if it doesn't look just like the natural peanut butter you had been eating for years. There is a lot of oil in peanuts and the longer it sits - the more the oil will separate and rise to the top.LOVE the testimonial about your grandkids asking for smoothies! I envy you guys - my boys think of me and the "health-nut-crazy-woman" mom and I am NOT COOL to them. Guest guest Posted March 22, 2011 Report Share Posted March 22, 2011 The only thing that I can think of that would make the store bought natural peanut butter more oily than your home-made natural peanut butter is that the store bought has had a few more days/weeks/months to sit on the shelf or even in the jar than your home-made does, thus allowing the oils to separate more than your home-made has time to do. I know with my family, we are eating it with a few days or a week at most so, even though the oils separate some and rise to the surface, it still does not have the amount of time to do so as your store bought variety does. Maybe yours is being used sooner whereas your commercial brand was on the shelf longer and had had more time to settle? I am using roasted peanuts, it whirs around then creates a giant air bubble, I tamp it down as much as I can, but it never gets all incorporated. I try to do 2 cups of nuts at a time. I let the VM go for about 10 min, but after that time, there is such a " burning " smell, I get scared and turn it off. I get nothing like peanut butter, it is a grainy, dry mess! I have tried adding oil, but still it doesn't get creamy, or all incorporated...what am I doing wrong?? My VM is a super 5000. Thanks for your help! Because it went from the plant where it was made to a warehouse to get shipped to the store to the store shelves giving the oil a long time to separate. Make a batch of fresh nut butter, set it on the counter and don't touch it for a month or two and see if it doesn't look just like the natural peanut butter you had been eating for years. There is a lot of oil in peanuts and the longer it sits - the more the oil will separate and rise to the top. LOVE the testimonial about your grandkids asking for smoothies! I envy you guys - my boys think of me and the "health-nut-crazy-woman" mom and I am NOT COOL to them. Kids in my audience beg their parents to get a Vitamix machine - my kids roll their eyes and ask, "what did you put in it this time mom"...
