As I have mentioned, cauliflower is one of my staple foods, and I make "mashed potato" cauliflower all the time-with a good old fashioned wavy potato masher! I just steam the cauli, put it in a big bowl, and mash it in seconds with the handheld gadget. I find a food processor or the VM get it TOO mashed. The type of potato masher with the little squares in it is a pain to use, but the wavy one works a charm! You can use a potato ricer to quickly rice it. It's less wet and more tasty. Another thing I love is to coarse chop some roasted cauliflower and ad mayo, mustardand whatever else you like in potato salad.
