I can save you a TON of money, Lea Ann! As I have mentioned, cauliflower is one of my staple foods, and I make "mashed potato" cauliflower all the time-with a good old fashioned wavy potato masher! I just steam the cauli, put it in a big bowl, and mash it in seconds with the handheld gadget. I find a food processor or the VM get it TOO mashed. The type of potato masher with the little squares in it is a pain to use, but the wavy one works a charm! You can use a potato ricer to quickly rice it. This sounds good! I just finished some "riced" cauliflower - it was a nice change from "creamed" - next I'll try "mashed" :-)

Couldn't you get a rice like texture with the vitamix?I loved mashed "potatoes" but I roast the cauliflower first. It's less wet and more tasty. Another thing I love is to coarse chop some roasted cauliflower and ad mayo, mustardand whatever else you like in potato salad. I have had friends that claim to hate cauliflower request this for potlucks.Kim in OR

I have never "wet chopped" cauli in the VM, but I should think it would work just fine. I have wet chopped broccoli, so it should work just as well. I will give it a try tomorrow.
