The doctor that taught me most of what I use in nutrition said to always eat the seeds. That's where most of the nutrition is. That includes apple seeds too. The seeds from any plant in the something-or-other rosacea family, of which both apples and apricots are a member, all have vit B-17 (leatrile). I thought the poisonous part was the B-17? This reminds me of what it says about most mushrooms being poisonous. 35 years ago I was looking in a mushroom book at amanita muscaria and psylocibe americana. It said they are poisonous and the symptoms are hallucinations. ;-) It cracked me up then because that was why I wanted them. My son and lots of other kids are showing high toxic arsenic levels in hair analysis, and nobody can figure out where it's coming from, other than treated wood and pesticides. I know bitter almond is cyanide, but I thought apple and apricot were too. I too eat the seeds on occasion. Are seeds harmful? There is some evidence that certain seeds from the rose family (apples, pears, cherries,apricots, peaches and plums),and very few citrus fruits contain very small amounts of the cyanide releasing chemical amygdalin. however, the amount of amygdalin present is negligible. An adult would have to consume 50 to 70 apricot pits to get a lethal doseof cyanide.The only case of fatal seeds we are aware of is the story of a man who saved up a cupful of seeds and ate them all at once. That would be like eating several bushels of applesin one sitting. (Though this story has been circulated for at least 50 years, we have not been able to document its source.) Our body has an enzyme called rhodanese which will detoxify small amounts of the cyanide into a thiocyanate compound which is then ex-creted in the urine. However, the long term toxic effect of eating the seeds from one or two apples a day has not been determined. There is some speculation about the body's ability to efficiently detoxify this daily dose. On the other side of the seed, the nutritious side, Lancaster Laboratories found that orange and apple seeds contained proportionately more of several nutrients than found in juice alone. For example, the orange seed contains 9 times more calcium, 7 times more magnesium and 1.5 times more potassium than an equal volume of orange juice. Apple seeds have 5 times more potassium than extracted apple juice. Considering these facts we feel that seeds are safe and provide an additional source of nutrients. However, if you are concerned or don't feel comfort-able including the seeds, feel free to remove them when preparing your juice. Thus only cancer cells can convert nitrilosides into benzaldehyde and hydrogen cyanide, and the process kills the cancer cells while it only nourishes normal cells! I'm not posting from The Great Beyond and I've consumed MANY an apple seed and can assure you that I'm not unique (or dead)--again, I appeal to common sense. Unless you consume a rather massive amount of apple seeds, you're in no danger whatsoever, ESPECIALLY if they're consumed in the fruit in which they're found. I would also point out that when you chew them, they're also pulverized. Sorry if I sound testy but few food-related things make me angrier than baseless scare-mongering of this kind. I also don't impose my views on others, and will in fact cook meat for anyone visiting my house who wants it. I do resent when I don't get the same treatment, as in people generalizing me for my food choices. In my case, it actually ISN'T a choice-I can't digest animal protein, so no other option, but I don't think what I eat needs to concern anyone else. I never go out of my way to get the seeds in the recipe (if they fall on the cutting board I sweep them away) and I've never gone out of my way to put them in either.
