Carrots are "ranked" in the same "glycemic load" as table sugar, which is ridiculous and outdated! The type of sugar in carrots will not spike sugar the way refined sugar does, and since it is easily assimilated, the body typically processes it and utilizes it very quickly, especially if consumed as a juice. Now, that said, ALL veggies should be used in moderation, since too much of a good thing is often just that-too much. I have to limit my carrots more because of the salicylate level than the sugar level, or glycemic load. So much GOOD nutrition in them that far outweighs the numbers on some ancient chart, to my way of thinking. I follow the glycemic load rather than the glycemic index for just that reason. It's more accurate and undated. -- What kind of sugar is in beets & carrots?
