I like to "sour" white bean (e.g. navy) soups with a little vinegar (I like malt but I think white is traditional) or lemon juice. Vinegar's not really good in black bean soups but a little lemon or lime is.

I'd love to hear if you find a good bean puree soup recipe. Lea Ann posted a recipe for tomato soup recently. It was super easy and I just found the post with it, so here is what she said in quotes below:

"I've made cream of tomato soup with tomatoes, a small cube of sharp cheddar cheese, a veggie bullion cube, a small lemon wedge and 4-5 dates (cream of tomato soup from 's is really sweet). If you add some zucchini it adds creaminess. Add some sun dried tomatoes and it gets thicker and has a really nice, bumped up tomato flavor..."

Here is another recipe Lea Ann shared for Tomato Basil Soup, and what Fiona did sounds yummy too!

MMMMMMMM, sounds yummy! Cranberry beans are one of my all time favorites, and one of the things that I can't grow indoors! I grow them and freeze them so I have them all winter. I am SO ready for spring-hands are twitching for outdoor gardens!

I use beans as a "cream" base for many things, including ice cream. I often puree just beans, but also like to have frozen cubes of beans pureed with veggies on hand to throw in a quick sauce or gravy. The cubes frozen with beans and veggies mixed together with a little veggie stock make a wonderful quick soup when just tossed in the Vitamix. I am going to make a bean

my husband does not like beans.  he likes this!

This isn't a vitamix recipe, just one that I do on the stove, but it

could easily be adapted.  I very often make soups with beans in

them.  For myself, I'd leave the ingredients unblended (although I'd

mash a bit to make the soup all thick but leave chunks), but for my

kids, I blend them until smooth. 

I start by frying an onion on very low heat (and you could use water

or stock for frying if you are avoiding oil), then add cumin,

coriander, cardamom, turmeric and a little pepper.  Also add a clove

or two of garlic, crushed.  If I'm trying to keep my soup close to

white, I'll leave out the turmeric and pepper, but in a coloured

soup I'll put it in for the anti cancer properties. 

Then I add a cauliflower or two, or chopped pumpkin, or chopped

zucchinis - depending on what sort of soup I'm making.  (If I do

pumpkin, I use a butternut and usually roast it in the oven first

just whole so that it is easy to cut, then you can just scoop it out

of the skin and drop it straight into the pot).  If I want to pad it

out a bit I might add potatoes.

Then I put in some sort of legume.  So here is where I would put in

a heap of lentils (matching colour to the veg) or beans.  If using

beans, I would want them to be precooked or else I'd use black eye

peas or adzuki beans so they are quick.  Cover in stock and cook it

all up.

Then for a smooth soup, puree it.

To give an idea of quantities, I'd put in equivalent to one whole

cauli, 2 or 3 potatoes and a cup or so of dried lentils.  Watch the

water/stock incase you need to top it up.  You could leave out the

potatoes (and get a little less soup).

My kids top it with grated cheese.  I have it plain.  You could add

whatever you like - sour cream, cream, etc.  I don't have dairy.

Now ... when I get my vitamix, I'll try something similar using raw

veg and precooked legumes.  I'll be trying a quantity just for

myself first incase it needs adjusting.  Hoping it will be good

though, as two of my kids aren't good at eating vegetables, but they

are pretty good at eating " smooth soup " , so hoping to be making a

few vitamix smooth soups this winter coming up.

update:  last night i cooked up some chopped linquica, added some sliced steamed carrots.  then i poured the puree in.  i needed to add water to get a " soup " consistency.  wow!  was great!  lots of good flavor w/o the bean texture my husband doesn't like....thanks to the vitamixed bean puree.
