Peanuts and peanut butter

I am trying to purchase bulk peanuts to make my own peanut butter. There are so

many choices. I'm thinking best for health, so would blanched, raw be what I'm

after? They used roasted in the dvd I received. I might like to roast mine, or

maybe I should just buy roasted. I read somewhere that the allergies people

often have to peanuts, are to the mold that is ever present - not the peanut

itself. I'm not allergic, but don't especially think mold is good for me :)

Any thoughts or tips?

Raw peanut butter will likely not taste very good unless you like eating raw peanuts. They are also likely to be The difference between the raw almond butter that I make and roasted almond butter is significant (to me). My husband and I love cashew butter (but we use roasted cashews) and they supposedly don't have the same level of aflatoxins that peanut butter has.

Also bear in mind that peanuts aren't actually nuts but are legumes which probably accounts for the extreme difference in taste between raw and roasted, plus it's likely they won't blend as well. You should probably stick with roasted unless you want to make peanut milk.
