,

The Pizza-in-a-jar and jar omelets sounds very interesting. Maybe something my very picky eating son would like. Are they easy to make? Do these jars go in a regular gas oven? I would love to get the recipes and how to's from you if you don't mind.

Thanks, -JB

Funny, I was JUST about to post about this. I looked at my VAST collection of jars today, and indeed some of the so called "wide mouth" ones DO have a shoulder (perfect word -I was going to call it a lip, lol) Some of my larger jars do have just such a shoulder, but the pint, 1/2 pints and some of the quart ones are totally straight, making it easy to dump out baked things. We do all sorts of "dinner-in-a-jar" recipes, and my daughter is crazy for "jar omelets" which we cook in our solar oven. She has frequent sleepovers with her non vegetarian friends and this way I am able to offer a selection of goodies for the meat eaters without crossing meat into my daughter's vegetarian stuff. "Pizza-in-a-jar" is a huge hit with the teenagers.

Happy to share, JB. I have only ever cooked them solar, but see no reason they wouldn't work on a low temp in a regular oven, but they also do very well steamed in a rice cooker (you could do them in a pan of boiling water if you don't have a rice cooker) Omelets are super easy-just scramble up a couple of eggs with a splash of cream in the Vitamix, (add whatever seasonings or herbs you choose) and either buzz your "toppings" right into the mix or layer them in the bottom of a well buttered mason jar. Pour in a bit of the egg, add more topping, then the remainder of the egg, and top with more topping (and/or cheese) My daughter likes green peppers and spring onions buzzed right up with the egg. If I am making other omelets, I will fill the other jars first, leaving enough for my daughter in the VM, then re-buzzing it with the

veggies. Place the jars ON A RACK in the food steamer or pot, add water to half way up the jars and cook until the eggs are set. For pizza, just roll your pizza crust VERY thin and slice out rounds that will fit into the jar (I use the outer ring of the two piece lid as a cutter for my rounds. Start by putting a dab of pizza sauce in the jar, then choice of toppings, then a round of crust, and continue this parfait style until you are just past the half way point of the jar. Cook in a 325 oven until the crust looks done and the toppings are melted. The crust should be "soft", but not mushy. The fun of this "pizza" is to let everyone add their own topping from a selection layed out on a tray, and to eat it straight from the jar! Also WONDERFUL for desserts-layer things like brownie dough with raspberry jam, vanilla cake with orange marmalade, etc. Delish!

music festivals (the kind where you camp for several days, sometimes weeks)

with. We're known as the " Leopard Loungers " . I've been trying to figure out how

I'm going to power up my VM when we go camping without electricity. I'm positive

that my VM is going to bring a whole new dimension to " camp cooking " , don't you

think?!

Wouldn't the airlines give you a hard time over your "bladed baby?" :)

Indeed they do give you a hard time. And that was BEFORE the security changes! I can see the headlines these days "Woman tries to board airline with bladed weapon of mass destruction-pulled away kicking and screaming in handcuffs after she refuses to let go of her shiny red gadget". Yep, that would be me...From: <kareningotham@...>Subject: Re: Re: Mason Jar Quick Breads Date: Friday, February 11, 2011, 11:50 AM
