It depends largely on what the purpose of the tofu is. If it is just to add body, you can easily sub tapioca or flax. Let me know the recipes you are mainly interested in, and perhaps I can offer some alternatives. FYI, you don't have to throw out the tofu--it can be kept (completely

submerged) in water under refrigeration for at least several days. You

have to remember to change the water daily, though.

You're right about that, I remember now, but still, just don't eat enough to use that much up within the several days time, just one person here.lol Was better when my children and grandchildren were around to eat stuff up.lol

Maybe I could just make several batches and freeze stuff. I do freeze regular firm tofu to get the texture.

Vitamix book page 70 cream of spinach soup calls for 3 oz of tofu and carrot ginger tofu soup on page 62 calls for 1/3 C of silken tofu.

I personally would use raw yogurt in place of the tofu in both of those recipes, or just some fresh cheese. A dollop of fresh sour cream would be lovely too-stirred in after blending.___
