Guest guest Posted January 25, 2011 Report Share Posted January 25, 2011 I have an extremely cool mini slow cooker; it's by Proctor Silex and has a very heavy rubber band that fastens the lid to the body so that you can take it to parties and such. It was really inexpensive so I bought two so that I could have one for backup--I mainly use it for grits. I think they discontinued it, though. Usually I start with dried beans though and add salsa or salsa ingredients when the beans are done and ready to be mushed up. Pour all but a cup or 2 into vitamix and whiz, then mix back in so you get a few chunks. Then I add the cheese at the end. I suppose I could learn to make smaller amounts !?! LOL I remember one day I came home from work and there were 14 young men at my kitchen table playing some game they had written and there was a chorus of " Hi Mom! " I'd learned by then, I said, " Hungry, huh? " Still having trouble not cooking for a lot of people but it's so handy to freeze the extras then I do not have to cook you see.
