Yum. Never thought of making this in the vitamix, I use the slow cooker. Try

adding a can of refried beans sometime :D

I have an extremely cool mini slow cooker; it's by Proctor Silex and has a very heavy rubber band that fastens the lid to the body so that you can take it to parties and such. It was really inexpensive so I bought two so that I could have one for backup--I mainly use it for grits. I think they discontinued it, though.

Easy Cheesy Queso Dip

Being the queen of "I don't like to cook" and having to bring stuff to pot luck dinners, I've started making queso dip - every time... I just dump a jar of salsa in the Vitamix and some sharp cheddar cheese (my favorite cheese flavor). Whiz on high until hot. Bring a bag of chips and that's my contribution!

You can make it as cheesy or as tomato-ey as you'd like - just adjust how much cheese you put in. Want texture? Just add some more salsa at the end and heat up in the mini crock pot that you'll be taking the dip to the party in ;-) If I was a cook (or were I inclined to dress up this dip) I'd add some cooked and drained sausage.

I've seen those, very cool for traveling about. I have a case for my 5 quart

with the bands too.

Usually I start with dried beans though and add salsa or salsa ingredients when

the beans are done and ready to be mushed up. Pour all but a cup or 2 into

vitamix and whiz, then mix back in so you get a few chunks. Then I add the

cheese at the end. I suppose I could learn to make smaller amounts !?! LOL

I remember one day I came home from work and there were 14 young men at my

kitchen table playing some game they had written and there was a chorus of " Hi

Mom! " I'd learned by then, I said, " Hungry, huh? " Still having trouble not

cooking for a lot of people but it's so handy to freeze the extras then I do not

have to cook you see.
