Raw milk is also VERY nice to work with in making your own cheese... I make my

own (Gouda, Feta, cheddar mostly) and wish that I could find sources for raw

milk inexpensively.

If you're interested in making your own cheese, I'd suggest checking out the

Cheese Forum at http://www.cheeseforum.org .

overweight and never had any chronic health issues but was always very tired.

It started when I was in high school.  I didn't sleep well during that time and

in college.  Too worried about my future perhaps.  I always thought that was

why I was tired.  It never really got much better although, I did start

sleeping a little better after college.   About 3 yrs ago, I started

" studying " nutrition a lot more, reading books and talking to people.  I always

thought that my diet was good, better than most people.  When I started keeping

a Food Journal, I started to see that I was eating a lot more salty, sugary and

processed foods than I thought.   Today my diet is about 95% vegan and I

mostly eat organic fruits, vegetables, grains and nuts.  I make a lot of my

food from scratch instead of buying processed (ie/ salsa in the Vitamix, hummus

instead of mayo, etc).   It does take

> some time to do this but I have gotten better and more efficient at preparing

my food and making sure that I have it so that I don't have to eat fast food.

It takes determination and dedication but it is well worth it.  Over the 3 yrs,

my diet has gradually been eliminating the processed food and animal protein

foods.  For about the past year, I have had so much energy that I cannot

believe it.  Another bonus is that I have not been sick but one time in the

past 3 yrs.

could not live alone anymore.  I had to stay with my dad in the

hospital/nursing home care while he literally came back from the brink of death

due to acute renal failure (the dementia disabled either of my parents from

being able to take care of themselves until his prostate issues got to that

point and a neighbor called 911).  In this time I have had to take over all the

responsibilities of their lives.  I do believe that if I had not improved my

health to the point that I have, that I would not have made it through the past

6 months.  My sister in law got terminal cancer after caring for her mother

with dementia for many years.  I believe it wore her down to that point and her

immune system became so weak.
