Just thought I'd share my successful make of a Hazelnut Chocolate spread that

actually has a decent amount of hazlenuts in it!

I used to have to cheat and buy jars of hazelnut butter, because my old food

processor could never get the nuts smooth enough.

So, you basically blend a jar of hazelnut butter, a cup of cocoa, and 1/2 cup of

maple syrup. (Of course, you can adjust to taste.)

Bingo. No transfats. No nasties, and a shed load of healthy fats.

When this lot runs out, I'll try it with whole hazelnuts. I know it will work

brilliantly, because the Nak'd Bars turn out as smooth as anything.

Hi Gizzie Just a couple of questions, as I'm in Australia and our standard sizes etc are probably different to yours. What was the size of the hazelnut butter jar? Also does it contain just ground hazelnuts, or other stuff as well? thanks heapsJanePS. Your timing for posting this is brilliant. Hiya Jane,

The Hazelnut butter I used was 100% hazelnuts. But you won't need to buy one if

you've got a vitamix. Just get a 300g of Hazelnuts, lightly toast them in the

oven, remove the skins by rubbing together in a tea towel, and then blend in the

vitamix to a smooth paste, together with about 150g cocoa powder, and 150 ml of

maple syrup. (Mind you, the 100% butter saves you the bother)

Mind you, I do it mostly by eye, and never use the same quantities twice, so

you'll have to adjust it.

Jane,

I bought a cake with the hazelnut filling from a fancy cake shop last year for my mother's 70th birthday. It was so good I often get cravings but I can't go order an expensive cake every time I think about it - haha. Do you still have the recipe for the cake you made? I would LOVE to try to make one on my own. I've never been able to find a cake with a nutella type filling.

This is so surreal. Just today I was at whole foods and looked at this organic

chocolate, hazelnut, spread. I was thinking to myself I wonder if I can make it

myself at home and what proportions I would need of the ingredients to make it

taste like Nutella. And here is your post. Amazing!

Hi Marilyn I'd be happy to share the recipe! It is a bit fiddly, but I think worth it. It is an attachment. Open the PDF file and you will see it. Personally, you'll have to do some copy/paste to make it usable since it covers so much screen real estate.
