Do you put the cubes in with additional liquids and ingredients or just the cubes themselves? Would you be so kind to walk me through your chocolate ice cream process and ingredients? Just a few minutes ago, I blended up homemade chocolate, tapioca, and agave and froze it-it makes the creamiest chocolate ice cream ever, and has little fat since I subbed the tapioca for dairy. Guest guest Posted January 21, 2011 Report Share Posted January 21, 2011 I make my own chocolate and sometimes use that, but I have also made chocolate ice cream using raw cocoa powder. When I use my homemade chocolate, I don't use cream, since there is enough fat in the cocoa butter, so I use tapioca instead of a cream base. Really though, all you need is basically what amounts to "chocolate milk" to freeze as your base. That can be made with chocolate syrup, raw cocoa powder, or melted chocolate-whatever your preference. Blend your choice with agave nectar (or choice of sweetener) and a base (cream, tapioca, rice milk, or whatever) Make the cubes just a bit richer than what you want your final product to be, since you will add a bit more liquid when you go to make the ice cream. I throw a handful of the frozen cubes into the Vitamix, and pour in a little cream (or rice milk, nut or grain milk, etc) and buzz it on high, tamping the ENTIRE time, being sure to get into the corners well. In a very short time, lovely ice cream! There are "methods" in the Vitamix cookbook for putting in liquid first, but I usually just drizzle it over the top of the ice cubes already in the container.
