Guest guest Posted January 19, 2011 Report Share Posted January 19, 2011 Yes, to all of the above, lol. I make ice cubes from my raw cow or goat milk, simply by freezing the milk or cream. I also make cubes of pumpkin or squash puree, chocolate puree, etc. and freeze those, so I have a variety of things on hand whenever the mood strikes me for ice cream-which is often! I often add agave nectar to the cubes so they are presweetened, making it even easier. I freeze the cubes in ice cube trays, then transfer them to labeled jars or zipper bags (I prefer jars, since I don't like to use plastic, but plastic bags are certainly easier to store! No special recipe or rocket science needed-just puree and freeze whatever ingredients you want in your final product. Be aware, though, that skim milk cubes need to be used pretty quickly because they sorta "freeze dry" after a while. I haven't made goat milk ice cream but there's not reason why you couldn't. There's a goat dairy that sells goat ice cream at our local green market in all kinds of flavors. Get creative! Just a couple add a bit of sweetness and richness to a smoothie and they make a wonderful frozen fruit dessert, again just a few cubes. I once mislabeled some veggie stock as "fruit stock" (yes, I know it sounds weird but I make pectin, then stock out of my fruit, lol) and made ice cream with the veggie stock by mistake. Much better to freeze something into cubes that'll keep things creamy. I've yet to use actual ice with my Vita-Mix. It doesn't take long to whip up a batch of ingredients to freeze. Biggest thing for me was freezer room...so I bought a new freezer JUST for things that will end up in the Vitamix, lol. If you blend up the pumpkin, coconut (or rice, nut, or grain milk) and agave and freeze into cubes, you have instant ice cream from that point whenever you are ready for it. Just a few minutes ago, I blended up homemade chocolate, tapioca, and agave and froze it-it makes the creamiest chocolate ice cream ever, and has little fat since I subbed the tapioca for dairy. You also want your "frozens" to be REALLY frozen, otherwise you'll end up with a smoothie. If you want ice cream, your ingredients need to be cold. Re: Making Ice Cream Questions Oh?!
