Guest guest Posted January 21, 2011 Report Share Posted January 21, 2011 I've made cream of tomato soup with tomatoes, a small cube of sharp cheddar cheese, a veggie bullion cube, a small lemon wedge and 4-5 dates (cream of tomato soup from 's is really sweet). If you add some zucchini it adds creaminess. Add some sun dried tomatoes and it gets thicker and has a really nice, bumped up tomato flavor... Heat the stock first to speed things up, walk the machine up from VARIABLE 1 to HIGH, then run until really hot (4 minutes will do it for sure). Re: Tomato Soup anyone? My sister just sent me this recipe. It's originally from Cooks Illustrated, and I'm sure that it could be adapted to the VM. em / TM Creamless Creamy Tomato Soup Serves 6 to 8. If half of the soup fills your blender by more than two-thirds, process the soup in three batches. You can also use an immersion blender to process the soup directly in the pot. For an even smoother soup, pass the pureed mixture through a fine-mesh strainer before stirring in the chicken broth in step 2. Serve this soup with Grilled Cheese Sandwiches for a Crowd or topped with Butter Croutons (see related recipes). Ingredients 1/4 cup extra virgin olive oil , plus more for drizzling 1 medium onion , chopped medium (about 1 cup) 3 medium garlic cloves , minced or pressed through garlic press (about 1 tablespoon) pinch hot red pepper flakes (optional) 1 bay leaf 2 (28-ounce) cans whole tomatoes packed in juice 1 tablespoon brown sugar 3 large slices good-quality sandwich bread , crusts removed, torn into 1-inch pieces 2 cups low-sodium chicken broth 2 tablespoons brandy (optional) 1/4 cup chopped fresh chives Instructions 1. Once you know what your Vitamix can (and can't) do, it becomes second nature to say "Oh, I can just eliminate [these steps] and do them all in the machine." Make sure that you follow Step 1 as written--you want to do everything it says except mash up your ingredients; your Vitamix will take care of that on its own. So just follow Step 1, remove that bay leaf, dump everything into the container, add whatever else is called for, walk it up to HIGH, and walk away for a while (I set a timer). And if you're using a bouillon cube or something else to make your broth, you needn't dissolve it first in the water--just dump it in. No need to return anything to a boil--I measured my Vitasoup once at 208º F--plenty hot, believe me. BTW, this is why I cherish my 64 oz. container--I know that a recipe like this is going to fit comfortably inside with no problem at all. Also, I don't every have a problem with foam (I recently read on the Blend It Up site that this may be due to the fact that I always start soups and sauces with really hot water) but if it should occur, Lea Ann has a method for eliminating it on the Enthusiasts home page. This wouldn't be good for me as I'd prefer a soup of this type to be completely smooth; my feeling is that this could be overcome by presoaking the tomatoes (I do this with other dried fruits for use in smoothies). However, for those looking for a soup with texture, the tomatoes could be added at the very end on a lower VARIABLE speed. The Vitamix allows your to customize to your own taste. I've been tossing them in (dry) to my tortilla soup at shows because it really boosts the tomato flavor and I like that flavor in my Tortilla soup. I blend for 2-3 minutes (I think - I've never timed it).
