Substitute for Salad Oil (only slightly OT :-)

I don't think that's too far OT because I make salad dressings in the Vitamix all of the time and would love to have a substitute for the oil!Thanks!

This will work with tapioca starch too, in case anyone has corn sensitivities.

I make tapioca starch by grinding tapioca pearls in the VM.
