Guest guest Posted October 5, 2001 Report Share Posted October 5, 2001 Peppers Provencal 1/4 cup best-quality olive oil 2 tablespoons sweet butter 2 cups yellow onions, thinly sliced 2 red sweet bell peppers, sliced into very thin strips 1/4 tsp herbes de Provence salt and freshly ground black pepper, to taste 2 cloves garlic, finely minced 1/4 cup finely shredded fresh basil leaves Heat oil and butter together in a heavy skillet until butter is melted. Add the onion and peppers; season with herbes de Provence and salt and pepper to taste. Simmer, stirring frequently, for about 45 minutes, or until vegetables are limp, tender, and lightly browned. Peppers Provencal should have a marmalade-like appearance. Add garlic and basil and cook for another 5 minutes. Remove from the skillet and let cool to room temperature. Drain excess oil (if you want to! ---) Serve at room temperature. Makes 2 cups. ~~ You have it easily in your power to increase the sum total of this world's happiness now. How?
