In Portugal, as in all mediterranean cultures, we eat a lot of home made soup - hearty vegetable and/or legume based. Lately I have been reading about CR and CRON eating but don´t see much regarding soup based meals. I wonder why!? Soup is very filling, can be served hot or cold, can be very nutritious and, normally, is a low calorie choice. It is very practical as you can make a large pot for several meals (you can add to it, for taste/texture variety). As a nutritionist I recommend it to my weight loss patients for a hearty meal, especially for dinner, and I eat it as often as I can too. I recommend you add into the pan the longer cooking ingredients 1st, and the faster cooking ones last, for nutrient preservation. I suspect that part of the reason is cultural inheritance/food habits. I lived in California for 8 years and in Toronto for 3 and vegetable based soups just weren´t readily available at most food establishments (whether on school campuses or at company cafeterias). What I could find on some few occasions were: Minnestroni, split pea, beef and barley, some asian vegetable with tofu broths, and lastly, the famous (high fat but delicious) San Francisco clam chowder. I found more often the books on the Chicken Soup (for the soul, etc.) than the soup itself! :-) If you would like some ideas, I would be more than glad to share.
